Buttermilk Bran Muffins
An Easy recipe for raisin bran muffins which taste good and are good for you! These buttermilk bran muffins are a wonderful way to add fiber to your daily diet. They make a great chronic constipation treatment if you eat them regularly. But remember to also increase your fluid intake or the extra bulk the fiber provides could lead to more constipation! Ingredients:
DirectionsPreheat oven to 375 degrees F (190 degrees C). Grease muffin cups or line with aluminum free paper muffin liners. Mix together wheat bran and buttermilk; let stand for 10 minutes. Beat together oil, egg, sugar and vanilla and add to buttermilk/bran mixture. Sift together flour, baking soda, baking powder and salt. 6. Stir flour mixture into buttermilk mixture, until just blended. Fold in raisins - and nuts. Spoon batter into prepared muffin tins.
